If you saw the video from Hardangervidda, you might have noticed our enthusiasm about a chocolate cake. On the third day of this trip we met a guy from Switzerland who was on his way from Lindesnes (the most southern part of Norway) to Nordkapp (the most northan part of Norway). We offered him some of our food, since we had decided to abort that day, and you should have seen this guy’s face when he ate this cake. One of our regular readers, Thorkild, commented that we “might have forgotten to give credit at the end to whoever made that chocolate cake“. Well, Ingunn (my wife); your cake was absolutely fantastic. Terje, you sent me a text and asked for the recipe the other day. I might just share it with everyone. Enjoy!

Ingredients

  • 3 eggs
  • 4 1/2 dl sugar
  • 250 g butter
  • 6 dl wheat flour
  • 3 ts baking powder
  • 2 ts vanilla sugar
  • 3 ss cocoa
  • 2 1/2 dl milk

Whisk the eggs with the sugar into eggnog (eggedosis). Melt the butter and let it cool to room temperature, then add it to the eggnog. Mix all the dry ingredients thoroughly. Add gradually the dry ingredients and the milk to the eggnog. Grease a deep pan (langpanne) and transfer the ingredients. Bake in the middle of the oven at 180 C for 20-30 minutes.

Glace

  • 300 g sugar
  • 200 g dark chockolate
  • 2 eggs
  • 400 g icing sugar (melis)

Melt the butter and the chocolate. Add eggs and icing sugar and mix thoroughly. Note! Adding a single espresso or some coffee will increase the experience even more. Let everything cool, then spread ontop of the cake. For best result, served straight out of the refrigerator.
